- 4 zucchini, quartered lengthwise
- 1/2 cup freshly grated Parmesan
- 1/2 teaspoon dried thyme
- Half teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste
- Two tablespoons olive oil
- 2 tablespoon chopped fresh parsley leaves

How To Make Oven Baked Zucchini Fries

Begin by preheating your oven to 350F or 180C. Spray your cooling rack with nonstick cooking oil and pop on top of a lined baking pan.
Set to one side. Next, using a small bowl add Parmesan, Thyme, Oregano, Basil, Garlic Powder and combine well. Season with salt and pepper.
Pop your zucchini fries on your cooling rack in your baking tray and drizzle your zucchini fries with olive oil.
Sprinkle generously with the Parmesan mixture.
Pop into the oven and bake until tender. This will take around 15 minutes. Then broil (grill) for a further 2-3 minutes until your fries are nice and crispy and golden brown.
Remove from the oven and serve immediately. Garnish with parsley and serve with a dipping sauce if you like. Aloi, Ranch, Chipotle Mayo, Tzatziki are all good choices.
