It doesn’t get much better than Gail’s quick and easy puff pastry vanilla slice. This is guaranteed to become a brand new favorite.

Easy Vanilla Slice Recipe Ingredients
- 2 packets Aeroplane vanilla dessert mix (Can use Cottees Vanilla pudding Mix)
- 300ml full cream milk
- 600ml thickened cream
- 2 Sheets Puff pastry
How To Make Easy Vanilla Slice
Preheat oven to 220/200C
Line 2 baking trays with baking paper
Place 1 pastry sheet on each tray, cover both with extra baking paper
Place a third tray over the top. You should now have a stack of 3 trays. The top tray is simply used to weight down the other two to stop the pastry from rising unevenly.
Bake pastry for 15 minutes.
Allow to cool. Meanwhile, mix milk and cream in a large bowl.
Add pudding mixes and beat with an electric beater until thick and smooth.
Line a 7” x 11” slice tray with foil.
Cut each pastry sheet to fit. Discard the excess.
Place one sheet of pastry in the bottom slice tray
spoon over the custard filling, spread evenly.
Top with the second sheet of pastry and chill for 1 hour. Before slicing top generously with icing sugar.
Slice and serve.

The weight of the trays keeps each layer of pastry flat, otherwise, your pastry will puff too much.
