We are always on the hunt for easy and delicious recipes to share. When Wendy from Wendy’s Kitchen Table fame told us about this Coconut Loaf Cake with Icing, we were excited.
Wendy refers to it as the 1+1+1+1 Cake. It’s literally 4 ingredients that are all one cup each. This recipe is fail-proof.
Wendy likens it to the Great Depression Cake and says that it is so incredibly light and moist. You can ice it using lemon or passionfruit and it’s great with a cream cheese frosting too.
According to Wendy, a 5-year old could make this cake! The bottom line is quite simple, you can’t go wrong!

- One cup of Caster Sugar
- 1 Cup Coconut Milk
- A Cup Desiccated Coconut
- 1 Cup Self-Raising Flour

Wendy’s Hot Kitchen Tip
If you don’t have Caster Sugar, simply put your regular Sugar in your food processor for a quick blitz. This will result in the fine consistency that is synonymous with Caster Sugar.
- Preheat oven to 180˚C (360F).
- Spray and line a loaf pan with baking paper.
- Place all ingredients in a bowl.
- Mix until combined.
- Spoon into loaf pan.
- Bake for 35 minutes or until golden brown.
Wendy suggests that you can brush your cake with a knob of butter and then sprinkle with coconut. You can also create a cream cheese icing and add in some passionfruit pulp.
The options are truly endless. There are lots of icing recipes on the web and you may even have your own. This cake is also perfectly delicious on its own.
