We were initially drawn to the recipe with 2 ingredients for banana pancakes, but we found that they needed a third ingredient. They are as fragile as they are flour free.
Since there is less to hold them together, you need to be extra careful when turning over. We found it best to use a thin spatula, but it’s still a bit difficult. So be patient. Dave suggests that you cook them over low heat and add spices like cinnamon and nutmeg to the dough.

How To Make Flour Free Banana Pancake Recipe

- 2 very ripe bananas
- ½ teaspoon of baking powder
- 2 eggs
Combine your ripe bananas, eggs and baking soda. Mash with a fork until you get a nice, smooth consistency.
Heat the pan over low heat. Use cooking spray or butter or coconut oil in your pan.
Use a ladle to add 2 or 3 tablespoons of the mixture to your pan and cook gently for a few minutes. Keep your pancakes smaller as they are easier to turn over.
Cook golden brown on each side.
Repeat this process for the rest of the dough until it is used.
Top up with maple syrup or fruit and serve immediately.
